Why I did paleo...
I started paleo to try to beat my infertility and continue to do today. I have lost 27 pounds doing this lifestyle. Unfortunately this process takes longer than expected. TTC and infertility is a bitch and a disease that is hidden and not talked about enough. A lot of us live alone in silence. Best way to cook a steak
Ingredients:
1 inch grassfed ribeye
Olive oil
Salt
Pepper
Directions:
1. Let steak sit out for a good 30m.
2. Pat dry with paper towel.
3. Coat with olive oil, salt and pepper on both sides.
4. Heat pan to high and wait till you see smoke or sprinkle water to see sizzle.
5. Add steak and sizzle for 1m and 15s each side to get rare! (It will be smoky!)
6. Take it out of the pan to rest for at least 5m.
7. Serve with sweet potatoes and roasted Brussels sprouts! 😋

Pan seared olive oil chicken with roasted veggies
Ingredients:
Mushrooms sliced thick
Zucchini sliced thick
Onion sliced thick
Olive oil
Salt pepper
Pam
Organic chicken breast
Directions:
1. Preheat the oven to 425. Put veggies in a large baking pan and coat with olive oil, salt and pepper.
2. Cook till crispy.
3. Pat dry chicken and add olive oil to each side with salt and pepper.
4. Pan cook on each side till crispy brown on both sides.
5. Serve veggies with chicken!
6. Enjoy

Garden salad with Shallot dressing
Ingredients:
Whole head of leafy green lettuce washed and chopped
Cherry tomatoes sliced in quarters
Cucumbers thinly sliced
Diced shallots
Sliced green onions
Sliced avocado
Shallot dressing (Paleo Cure Book Recipe)
*** or balsamic vinegarrette recipe at bottom***
Directions:
Mix the ingredients together and enjoy!!!
Dressing:
Blend balsamic vinegar, olive oil, garlic and Italian seasoning together. Taste and then add whatever ingredient you think it needs more of.

Roast
Ingredients:
Top round beef roast
32oz organic beef stock
Olive oil
Salt
Pepper
Balsamic vinegar
Carrots
Celery
Onions
Mushrooms
Directions:
1. Put carrots, celery and onions at the bottom of the slow cooker.
2. Add the roast and then the mushrooms around the roast.
3. Add beef broth and balsamic vinegar on top of the roast.
4. Sprinkle with olive oil on top.
5. Add salt and pepper.
6. Cook on low for 10 hours in the slow cooker.
7. Take out the roast and add extra balsamic to the roast.
8. Enjoy!!! And don't forget to eat the veggies!
*** keep the broth and extra veggies for a soup!!!
